The short version

Hydrabit does not have an account, does not have a server, and does not collect anything. Everything you enter, including your goal, history, and logged glasses, stays on your iPhone. The only place any of it also goes is Apple Health, and only if you allow it.

What Hydrabit stores, and where

Your daily goal, logged drinks, and streak history are stored locally on your device. If you grant permission, each glass is written to Apple Health as dietary water, and water that another app has written to Apple Health is read back so your daily total stays accurate.

Deleting your data

Deleting the app removes everything stored on your device. You can also tap Delete all data inside Hydrabit to wipe it without removing the app. Anything already written to Apple Health stays in Health — remove it there if you want it gone.
